Cashew Queso

Cashew Queso

              Looking for a healthier alternative to accompany those nachos for Taco Tuesdays?  
              Try subbing this vegan version instead.  Its also great in sandwiches and wraps.
 
  • 1 cup raw cashews (soak in warm water 10 min)

  • 1/4 cup pecans (optional)

  • 1/4 cup cooked sweet potato (optional, for creaminess)

  • 1/2 cup veggie stock or water

  • 2 Tbsp nutritional yeast

  • 1 garlic clove

  • 1 small shallot

  • 1/2 lemon, juiced

  • 1/2 tsp olive oil

  • 1 tsp paprika or chili powder

  • 1/4 tsp turmeric (for color)

  • 1/4 – 1/2 tsp pink salt to taste
  • 1 small Serrano or pinch Cayenne pepper (optional)

    • Blend until smooth

    • Serve with veggies like crunchy cauliflower, wraps, sandwiches and more!
