I LOVE granola… but when I figured out I had an intolerance to oats – I was heart broken. So I came up with this version that I think tastes even better – plus by making my own, I know it has less calories and healthier ingredients.
This Maple Paleo Granola is grain free, gluten free, and free of refined sugar. Pair with your favorite non-dairy milk (I prefer macadamia nut milk or coconut milk), or eat alone as a yummy healthy snack.
INGREDIENTS:
* It’s important to choose ORGANIC ingredients as much as possible. And below ingredients are suggestions – substitute various nuts and seeds as you wish.
1 1/2 cups coconut flakes
1 cup sliced almonds
3/4 cup chopped pecans
3/4 cup chopped walnuts
1/2 cup sunflower seeds
1/4 cup chia seeds
1/8 cup sesame seeds
1/2 cup sprouted pumpkin seeds / pepitas
1/4 cup organic raisins
1/3 cup maple syrup
10 drops Monk Fruit Sweetener
2 Tbsp coconut oil or avocado oil
1 tsp vanilla extract
1/4 tsp pink salt
PREPERATION:
Mix wet ingredients together and stir into mixed dry ingredients to coat.
Spread onto prepared baking sheet
Bake at 250 degrees for 20 mins, stirring occasionally. Let cool.
